Sweet Potato Garden Burgers and Avocado + Tomato Salsa

As you may of figured out by now I am new to this wonderful world of social networking. 100% Vegan Healthy Happy Life tweeted about this sweet potato burger and they looked divine. Unfortunately they contained a lot of wheat which, of course we cannot have and I was missing some of the other ingredients. I am also terrible at following recipes something about having to read while entertaining, cooking and not burning the house down! I made the salsa out of our own tomatoes and shallots fresh from the garden. The kids got a kick out of picking the vegetables and eating them with supper!
I made them without the bun because it was way too hot to bake bread today. We had them with avocado salsa and rhubarb relish. Everyone loved them! Which was awesome, even my oldest daughter ate about 6! She is not a big eater at 27 pounds so I was thrilled.
Garden Sweet Potato Burgers
Ingredients
2 cups baked sweet potatoes
3 cups chick peas boiled or from can
1/3 cup shredded unsweetened coconut
1/4 cup tahini
1/3 cup nutritional yeast
1/3 cup almond milk
1/4 tsp cayenne (less or more depending on how hot you like it)
1 tsp salt
Method1) Pulse up chick peas, sweet potatoes, coconut, tahini, nutritional yeast in food processor
2) Slowly add almond milk
3) Remove from food processor and mash in sweet potatoes.
4) Form patties and put on greased sheet or silicon sheet. I love silicon sheets.
5) Bake 20 minutes and flip them bake another 15 minutes
Avocado + Tomato Salsa
Ingredients Avocados finely diced

4 Roma tomatoes (or any that you have) finely diced
juice of one lemon plus zest
juice of one lime plus zest
3 cloves of garlic finely minced
2 shallots finely minced
1/4 cup of fresh basil (or any other herb you enjoy) chopped finely.
1 tsp salt
Chili flakes to taste
into bowl.
2) Combine all ingredients.
Tip: If making ahead leave pits in the salsa and press Saran wrap right onto it.
