Easy Snack Bars
Post By: Rhiannon @ http://www.happylittlefeet.ca/
My kids love snack foods, I often give them "dinner" and call it a snack for some reason it is always more appealing. Whether it is frozen peas, pop corn or pasta, a snack is always received with more enthusiasm. This is a nice simple bar for the kids to enjoy on a lazy afternoon or out and about doing activities. I really like them because they are no bake so no hot oven in the heat! Thank goodness.
Easy snack bars
Ingredients
6 cups organic brown puffed rice - Gluten free
1/2 cup raisins
1 cup organic shredded coconut
1 cup nut butter
1 cup agave nectar
1 cup organic white sugar
Method1) Heat sugar and agave nectar over medium heat until sugar has dissolved (careful to not burn).
2) Meanwhile gently mix together dry ingredients.
3) Stir in nut butter to the syrup mixture.
4) Pour mixture over dry ingredients and stir until combined.
5) Pour mixture into a parchment lined pan.
6) Place in fridge until firm, about 1hour.
7) Cut into squares and eat!
Tip these are better kept in the fridge, at least when it is above 70 F out.
